This Masamoto Sohonten KS4216 petty knife is a compact and highly versatile Japanese kitchen knife designed for precision work.

The petty is one of the most practical secondary knives in a professional or enthusiast kitchen. Care instructions

This is a high-carbon steel knife, not stainless steel.

To preserve the blade:

  • Dry immediately after use
  • Do not leave wet or dirty
  • Do not wash in dishwasher
  • Avoid acidic foods sitting on the blade for long periods
  • Apply a light coat of camellia oil if storing for extended periods
  • Sharpen with Japanese whetstones

A natural patina may develop with use. This is normal for carbon steel and can help protect the blade over time.
