Method

KALI HOCHO is not built around a fixed catalogue. Each knife is selected individually, evaluated on its own merits and described as clearly as possible before being offered for sale.

Research

We look for Japanese kitchen knives with a reason to be selected: maker, construction, steel, profile, condition, age, rarity, usability or overall character.

The selection may include vintage knives, pre-owned pieces, unused old stock and selected new blades. Not every knife is old, and not every knife is used. Each item is considered individually.

Evaluation

Before listing, each knife is assessed for visible condition, geometry, markings, steel, finish, accessories and any relevant signs of age, storage, sharpening or previous use.

When a knife is vintage, NOS or pre-owned, the description aims to distinguish between normal age-related features and issues that may affect use, value or preservation.

Preparation

Knives are prepared with a conservative approach. The goal is not to erase the history of a blade, but to present it honestly and preserve its character.

Depending on the item, preparation may be limited to basic inspection, light cleaning, documentation and safe packaging. More invasive work is avoided unless it is necessary and appropriate for the specific knife.

Photography and description

Each knife is photographed and described individually. Product pages highlight visible condition, maker marks, boxes, saya, storage signs, patina, scratches, oxidation, sharpening marks and other relevant details whenever possible.

Photos are part of the description. Please review them carefully before placing an order, especially for vintage, NOS or pre-owned knives.

Listing philosophy

KALI HOCHO does not treat Japanese knives as anonymous products. A knife may be valuable because of its maker, steel, geometry, age, condition, rarity, usability or simply because it has been preserved well enough to continue its life in the right hands.
