Description
This Masamoto Sohonten honyaki takohiki is a traditional Japanese single-bevel slicing knife associated with Tokyo/Kanto-style sashimi preparation.
At 270mm, it offers excellent control for sashimi, sushi work and precise slicing of octopus, fish and delicate proteins. Compared with a yanagiba, the takohiki has a straighter profile and a more squared-off tip, giving it a distinctive traditional appearance and controlled pull-cutting feel.
The knife is believed to be new old stock from the 1990s. It appears unused and is supplied with its original Masamoto box. The box is marked 本焼 / 刺身 / 270mm, identifying the knife as a honyaki sashimi knife.

Care instructions

To preserve the blade:

- Sharpen only with appropriate Japanese whetstones
- Handle carefully: honyaki blades are hard and can be more brittle than softer laminated knives
A natural patina may develop with use. This is normal for carbon steel.
